So currently we are using a 3rd party skin.

Trying to apply a default skin:
If I go to Page Management > select a page > Appearance tab > Page Theme/skin
This is what it looks like, there are no other skins showing. Same for the 'Skin Plugin' tab on the right-hand side of pages

it really looks like there are JavaScript problems. Did you install modules and added it to all pages or modify the skin recently?

another suggestion: turn on "display script errors" in your browser to get notified about JS issues.

Hi Sebastian, I think you may be right that it's related to JavaScript.

I compared my test site and live site in the Dev Tools > Console tab:

1. Screenshot for test site
2. Screenshot for live site

You can see they look slightly different, with the live site being a *little* bit better, but still broken. Now the question is, do any of these console message/errors mean anything? and how could I fix them.

As I said previously, the only changes I've made are updating the DNN Platform from 8.0.0 to 8.0.2, nothing directly about the skin. On the test site I even tried re-updating the files for 8.0.2 but that made no difference. Would re-updating the skin maybe be worth trying?
