I have a Helm hosted site, and there is nothing I can do effectively to get from 4.7 to 4.8. I have tried everything from deleting all the 4.7 files to rolling back and whenever there is in error for about 15 minutes every user that visits my site gets that page showing it is upgrading. I get the notification the files are 4.7, the db is 4.8 and it is doing horrible caching where if you use any browser but IE you see when I update a page immediately, but in IE, nothing changes for about 10 minutes. I have even deleted all the files and restarted the browser.

The documentation is so convoluted there is little way to make heads or tails of it. The path to upgrade information is really really really bad. If you contribute to DNN it may make sense, but you have effectively screwed the users that are not that familiar.

I was actually developing a site on DNN 4.3 for a Hollywood movie studio until 4.8 came out, it was really painful to upgrade to 4.7, and to 4.8, it was impossible. Way to go gang, I can't even effectively roll back to 4.7 for them or my own site so I have to run a fresh installation on Helm with 4.3 since Helm does not have any package newer than that.

Actually, the documentation has all of the steps laid out for you.  However, as you found out (and I did in the past), it is not laid out in a way that is 100% newbie-proof. 

The one thing that it tells you to do, but you should have already known, is that prior to applying the upgrade, you should have backed up your site directory and the site database.  This way, rolling back a faulty upgrade would only take a couple of minutes.

Another thing to note is that no matter how often you apply upgrades, and how good you are at it, you should ALWAYS perform a test upgrade in an offline or test environment before applying it to the live site.  (And don't forget to change the "AutoInstall" AppSetting to "false".)
