I don't see it under Host - Extensions - Install Available Extensions and I can't find it anywhere online for download. Any suggestions? 

Should I just add an HTML module to every page? I'm guessing there's a reason for the Admin - Google Analytics page... is that where I should add an HTML module with my google script in the footer?

The Google Analytics module is not an install package, it is always part of DotNetNuke. What happened, did you delete the module?

In that case, do a fresh install of DNN 5.6.7, do a data compare of the database, and sync back the data for the module. At the file system level, you need to copy the folder /desktopmodules/admin/analytics
