Maybe I should try using a different module, however this is the situation I'm faced with:

Site owner wants a contact form where there is the ability to choose the department the message needs to go to (Sales, Tech, On-site, etc). I have installed and setup the Feedback module, however when the message is recieved it only shows as coming from the "webform@domain.com" email address that is defined in the module settings under "Send From". Is there any way to either: a) force the From address to reflect the information pulled from the "Email" field  or b) make the email field display in the message body?

The problem is that people are filling out the information and when the owner recieves the mail, it doesn't have the neccessary info for him to contact them back, and he is not keen on logging into the site each time.

DNN Ver : 4.09.00
Feedback Ver: 04.04.03

No Membership system, there is one Admin user and that's it (aside from SuperUser).
No Portals

From your post it sounds like you want to direct the feedback to specific departments/email addresses (which the module supports) but then towards the end you're talking about the Send From to be modified.
The Send From is usually the Portal Administrator (if the Send From on the feedback form has not been defined) - this is because the site is sending you the email and not the user. Additionally if you want to change this to be the email of the user who is submitting the feedback simply leave the field blank and it will send an email to the Send To address using the user's submitted email address.

Maybe I'm not understanding your question correctly - normally if someone submits feedback - a copy of it goes to your Send To and this usually has your submitter's email in it. Is this not occuring?

That was it, looks like I just needed to leave the Send From field blank.
