I hope there is a simple solution to my problem as it is important to see when modules have been updated.

Any help would be much appreciated

In earlier versions of DNN this information wasn't stored, so your database doesn't have updated dates yet, as you go through and make updates they will be populated.

Thankyou for your reply, I have updated/deleted instance and applied new instance of text/html and date is still 01/01/0001

Is there a way in which this date can be manually updated?

please check, if there are issues logged during upgrade, also you should validate the Stored procedure for updating the text, it should set the date time correctly, otherwise the select procedure will retrieve Null values..
